At Aurelio, Executive Chef Karl “Charlie” Eggetsberger brings his philosophy of precise craftsmanship, clear flavors, and strong regional focus to the table. After gaining experience in renowned establishments and taking part in the international foundation program Fundaziun Uccelin by Andreas Caminada, Karl “Charlie” has been responsible for the culinary direction at Hotel & Chalet Aurelio since July 2025. His focus is on a cuisine that highlights quality ingredients and offers guests an authentic and refined dining experience.
Karl “Charlie”, you have worked in many high-end kitchens. What have you taken from these experiences into your own cuisine?
In great kitchens, you learn to work cleanly, take responsibility and treat products with respect. These experiences stay with you and help you develop your own style. I learned how important patience, precision and a clear focus on the quality of every seen element are – values that still guide my work today.
Your cuisine is strongly influenced by regionality and seasonality. Why is that so important to you?
For me, it is important to work with products that are fresh, high-quality and transparent in their origin. Regional products offer short supply chains, excellent quality and a clear provenance. Cooking seasonally naturally results in fresher and more honest dishes. Wherever possible, we source ingredients locally, while always choosing the best product for each dish. This allows the cuisine to remain precise and convincing in flavor.

Which experiences from your career have influenced you the most?
Above all, the years spent in high-end kitchens and my participation in the Fundaziun Uccelin program. That time showed me how essential craftsmanship, precision and respect for ingredients truly are. I learned how to bring out the best in every single element and how decisive even the smallest detail can be for the final result.
